In a large skillet heat up the olive oil on medium heat. Once the oil begins to sizzle, place the chicken into the skillet. You want to make sure that each piece is separate so that there are no pieces touching.

Start by preheating your oven to 450 degrees Fahrenheit. Place the pieces of chicken breast in a freezer bag. Pound the chicken with a mallet to tenderize the meat. Place flour, salt, and pepper into the bag with the chicken breasts. Coat the chicken breasts on both sides.
Next, beat eggs in a shallow bowl and set the bowl aside. Mix the panko crumbs, garlic powder, and 1/2 cup of Parmesan cheese in a separate bowl.
