Start by preheating your oven to 450 degrees Fahrenheit. Place the pieces of chicken breast in a freezer bag. Pound the chicken with a mallet to tenderize the meat. Place flour, salt, and pepper into the bag with the chicken breasts. Coat the chicken breasts on both sides.
Next, beat eggs in a shallow bowl and set the bowl aside. Mix the panko crumbs, garlic powder, and 1/2 cup of Parmesan cheese in a separate bowl.
Dip the coated chicken into the eggs. Next, place the coated chicken in the panko mixture. Coat both sides finely with the panko mixture. Repeat this process for all of the chicken.
